Beefed Up Barley Soup

This originally started out as a soup mix. The cellophane bag had all of the dry ingredients to make a hearty soup. Then it disappeared from the shelves. Bonita set out to duplicate the recipe and this was the result. A number of years later, we found the barley soup mix again. We like ours better.

A hearty barley soup with hamburger.

  1. In a large sauce pan, stir barley and 4 cups of water. Bring to a boil. Reduce heat and simmer, partially covered, for 30 minutes.
  2. Brown hamburger. Drain and set aside.
  3. In a large soup pot heat oil, add onions and celery. Cook until softened, about 6 - 8 minutes. Add mushrooms and continue cooking until the begin to soften.
  4. Add broth, carrots, tomato paste, hamburger and cooked barley with liquid. Bring to a boil, reduce heat and simmer for about 30 minutes. Salt and pepper to taste.
