Mustard Cabbage and Franks
A German inspired dish from Lynn's side of the family. Steamed cabbage with a mustard vinegar sauce. I don't remember the first time that I had this dish.

Instructions
  1. Chop, or shred, cabbage and place into a soup pot. Add salt and water. Place frankfurters on top. Cover and bring to a boil. Cook over medium heat for 12 to 15 minutes or until cabbage is tender. Drain and then cover with mustard sauce. Stir to coat cabbage.
Mustard Sauce
  1. While cooking cabbage and franks, melt 2 Tbs margarine in a sauce pan. Blend in 1 Tbs flour, 1 Tbs prepared mustard, 2 Tsp sugar and 1/2 Tsp salt. Combine 1/2 cup water and 1/4 cup vinegar and gradually pour into the mustard mixture. Cook and stir until thickened. Add 1/4 cup chopped sweet pickle or relish, 2 Tbs mayonnaise or Miracle Whip. Add about 4 dashes of Tabasco to finish.
Recipe Notes

Very quick and easy to make. It scales pretty well by doubling the mustard sauce to match the quantity of cabbage, The cabbage cooks down a lot so don't think that you have too much starting out.
