Ingredients
- 1 package Sweet or hot Italian turkey sausage 19.5 oz Jennie O brand. We use the sweet variety
- 1 Large Onion Peeled and chopped
- 3/4 Cup Fennel Thinly sliced and chopped
- 1 Can Diced Tomatoes with basil, garlic and oregano 14.5 oz or similar. Don't use plain diced tomatoes
- 2 tsp Italian herb seasoning
- 3 Cans Small white beans 15 oz
- Parmesan cheese Shaved or freshly grated (optional)

Instructions
- Remove casings from sausage and place sausage in a large pot. Break into bite-sized pieces with a wooden spoon and cook over medium-high heat, stirring often, for 5 minutes.
- Add onion and fennel; cook for 5-10 minutes or until the vegetables are very soft and meat is cooked through.
- Add tomatoes and seasoning; cook for 5 minutes.
- Add beans and cook for 5 minutes more.
- Serve with Parmesan cheese if desired.

Notes on the recipe:
I didn't use "turkey sausage", just regular "Italian hot sausage". Don't forget to sprinkle with Parmesan - Anne Bourdens
